Packed to the brim with flavour, Vinegar Trotter is a traditional Cantonese dish that’s favoured by many, especially by confinement mothers due to its restorative and strengthening properties. Named after its signature dish, this stall in Chinatown Complex Food Centre is helmed by Chef Sham, who is the former owner of ‘Lao Huo Tang’. The star of the show is the Chan Kong Thye black sweet rice vinegar, which is used to whip up the signature vinegar trotter ($6.80) that’s served in a bubbling claypot. Albeit a little small, the trotter pieces are soft and fall apart easily. Each piece contains a good balance of meat and fat, with a layer of skin that’s thankfully devoid of any hairs. Accompanied by pieces of ginger and a whole braised egg, the pieces of pig trotter swim in a thick and fragrant pool of gravy, which is both (not too) sour and sweet at the same time. If you can’t get enough, the black vinegar is also available for purchase at $6.80 per bottle. Another acclaimed dish is the aromatic sesame chicken ($4.50). The dish contains a generous amount of chicken; I was pleasantly surprised to find a whole chicken drumstick, amongst other pieces, in mine. The sauce is very tasty, and surprisingly not too oily. The chicken pieces are tender, and are accompanied by mushrooms and spring onions. I recommend adding an additional bowl of rice for $0.50 to soak up every bit of the gravy!
